Sage is indigenous to Dalmatia, where its woody shrubs can cover entire slopes. Dried sage leaves have a strong, pleasant aroma and a bitter, pine-like taste with a pronounced earthy note. It is excellent as a spice for meat dishes, especially lamb and poultry; for preparing omelets and various sauces. It is an ideal addition to hearty winter dishes because it can retain its flavor and works incredibly well with fatty foods because its bitterness helps digest fat.
